Heart healthy cookies
  • 250g butter, softened
  • 200g light brown soft sugar
  • 2 eggs
  • 2 teaspoons ground cinnamon
  • 150g selfraising flour
  • 260g porridge oats
  • 125g chopped walnuts

How to make:
  1. Preheat the oven to 170 C / Gas mark 3.
  2. In a large bowl, cream together the butter, brown sugar until smooth. Beat in eggs one at a time, then stir in cinnamon. Combine the flour and the creamed mixture until just blended. Mix in the oats and walnuts. Drop by heaping spoonfuls onto ungreased baking trays.
  3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before transferring to a wire rack to cool completely.
