Heart healthy cookies
- 250g butter, softened
- 200g light brown soft sugar
- 2 eggs
- 2 teaspoons ground cinnamon
- 150g selfraising flour
- 260g porridge oats
- 125g chopped walnuts
- Preheat the oven to 170 C / Gas mark 3.
- In a large bowl, cream together the butter, brown sugar until smooth. Beat in eggs one at a time, then stir in cinnamon. Combine the flour and the creamed mixture until just blended. Mix in the oats and walnuts. Drop by heaping spoonfuls onto ungreased baking trays.
- Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before transferring to a wire rack to cool completely.
